ROAST CHICKEN & VEGGIES
I believe everybody should have a fool proof roast chicken recipe in their recipe book. It’s my go to option whenever I am lazy or busy & it never seems to disappoint me!
Crispy skin, juicy meat, tons of flavors on a bed of caramelized veggies! Who wouldn’t want this for lunch/dinner? Besides, the leftovers make amazing salads, sandwiches & quesadillas.
FRIED MEATBALLS
I have my freezer stacked with all kinds of meatballs! They are “life savior”; when you are busy or lazy to cook, you just get them out of the freezer, cook & lunch is served in no time! Once a month, I buy about 3-4 kilos of minced meat, mix each kilo with spices & herbs, shape into balls & freeze!

There is nothing more creative in the kitchen than working around with spices. You simply toss spices with different tastes, textures & origins to create a totally new flavor.
Since I have Indian blood in my family, Indian spices are a staple in my kitchen. I love how spicy yet sweet & deep they are.
ROASTED PEPPER MUSHROOM PASTA SAUCE
Roasting has been my favorite “go to” technique for cooking veggies; it caramelizes the sugar in the veggies, creating a delicious crispy exterior with a creamy interior. Besides you get the oven to do all the work, while you indulge in the food.
Roasting peppers is a story of its own! Ever since I discovered roasted peppers & my fridge/freezer are always stacked with piles of them!
EASIEST TENDER CHICKEN PANEE
I lived in my mother’s house almost deprived of anything fried for 2 main reasons. First, she always hated the 3 steps of coating; flour then egg then breadcrumbs. Second, she hated the process of frying more than anything in the world.
CHICKEN WITH LEMON DILL SAUCE
I believe that dill is the best (by far the best) green herb on earth. I add dill to almost anything I eat & mixing it with lemon brings out its flavor more & more. The mixture of lemon & dill never seems to fail me; always my winner combo.
