MODERN NEGRESCO WITH VEGGIES

FullSizeRender(11)

As much as I love creating new recipes from scratch, I also adore re-visiting classical dishes & playing around with the ingredients to give them a new vibe.

I was never a big fan of Negresco honestly, especially the taste of boiled chicken, which in my point of view, overpowered everything else. But I liked the concept of adding chicken to oven baked pasta so I decided to give traditional Negresco a new twist.  Continue reading “MODERN NEGRESCO WITH VEGGIES”

ROASTED PEPPER MUSHROOM PASTA SAUCE

Roasting has been my favorite “go to” technique for cooking veggies; it caramelizes the sugar in the veggies, creating a delicious crispy exterior with a creamy interior. Besides you get the oven to do all the work, while you indulge in the food.

Roasting peppers is a story of its own! Ever since I discovered roasted peppers & my fridge/freezer are always stacked with piles of them!

The Holy month of Ramadan is 2 weeks from now & I can’t wait for my favorite 30 days to start :) The month of unbelievable spirituals, gatherings & food!

Unlucky me, I am one of those people who finishes Ramadan with 3-4 extra kilos on my waist line. I don’t know whether it’s the fasting or the amazing gatherings that make my appetite go crazy or the delicious food that makes me think of nothing but food!

But lately, I have been making some changes that proved to be working! For me, Ramadan is not the month of healthy food; I eat, I indulge & never deprive myself but with 3 new rules:

VEGGIE LOADED CLASSICAL BOLOGNESE SAUCE

Pasta Bolognaise

Believe it or not, bolognese sauce is one of the most difficult pasta sauce I have ever tried to cook. As basic as it may sound, it took me years to find the perfect recipe.

After over 10 total failures, I gave up & for the past year I never cooked bolognese sauce at home. It always came out very watery & very meat-y; you could feel the chunks of minced meat in your mouth & the sauce never stuck to the pasta! NEVER!!

Three months ago; I felt really offended! Seriously?!! Bolognese sauce!! One of the most basic pasta sauces ever!! I challenged myself & my research trip started :)

It’s me again with another pasta dish!

I just happen to love carbs … all kinds of carbs!

Sometimes I go for light healthy pasta recipes but most of the time, I go for creamy cheesy sauces that just melt in your mouth!

Cream Cheese, Fresh Buffalo Mozzarella & Parmesan cheese is a mixture made in cheese heaven! The different flavors & textures of the 3 cheeses complement each other so well without being too greasy or heavy. Cheese heaven, right?

ALL PURPOSE TOMATO BEETROOT MARINARA SAUCE

Before having kids, I never cared about cooking certain food at home; I always believed in the idea of “why cook this when it’s available in the supermarket?”.

But with all the health raised issues about most store bought items, I started to be more inclined towards cooking almost everything at home. It’s healthier, cheaper & definitely free from all those poisonous preservatives.

I love making marinara sauce with canned tomatoes; it comes out perfectly sweet & tangy; just spot on. Trying to use less canned ingredients, I tested cooking the marinara sauce with fresh tomatoes but it was a big flop!

ONE POT TOMATO CILANTRO PASTA

pasta 2 (1)

Creamy … Delicious …Quick … Easy! This is the perfect dish for any busy or lazy day!

Today I will start to share one of many posts to come for PASTA; one of my favorite foods on earth. If I am to be stuck alone on an island, I would choose pasta with all its forms, shapes & tastes to be my companion.

The hype for “one pot” pasta has been going on for a while but I was never very interested to try it as all what came to my mind was “how will my pasta taste with all this starch in the sauce?”. Until one day about 8 months ago, I was too lazy to cook; actually lazy to even get out of bed so I thought to myself “it’s time to give this crazy idea a try”. To my surprise, the pasta came out delicious – very creamy as if it had cream but the only thing that went wrong that time was the cooking technique.
