OLIVE OIL, YOGHURT & ZUCCHINI CAKE

As I told you before, I am not a professional baker but serving my family a homemade cake every week is a must so I am always playing around in the kitchen :)

I was never a fan of frosted cakes (except for carrot cake of course), I always prefer old fashioned cakes that you enjoy with a cup of coffee without feeling so guilty & heavy! I have been trying to develop a honey cake recipe for almost 2 years but they always came out a total disaster.

CHOCOLATE DIRT CAKE

FullSizeRender

Yes, I don’t like dirt cake at all. I bought it from every single store that sells it & still … I HATE it. I don’t know but I always find it too sweet & watery; mmm … not my kinda dessert.

This Easter my kids are almost 2 years old & I really want them to start enjoying all our Easter traditions but they are still too young for coloring/painting eggs (we will end up with an EGG mess … I am sure hahaha). I searched the Internet for other creative ideas that my kids can enjoy & came across hundreds of dirt cake recipes. I liked the idea a lot as my kids will love decorating those little pots because they are now very interested in learning about trees, flowers & plants.

Besides, I couldn’t believe how easy it is to prepare this stunning looking dessert. NO baking whatsoever is required, just some crushing, mixing & whipping woohooo.

CLASSICAL FRENCH TOAST

FullSizeRender

I know French toast seems like a regular recipe that anyone can prepare at home!

BUT NO. A BIG FAT NO!

Let me tell you my story with French toast.

I have been making French toast for ages; it’s just some milk & eggs beaten together with some flavorings! No need for a recipe, right?

Mine came out tasting nice but the texture always varied from a little dry to soggy although I made sure I never under or over soaked my toast so why the inconsistency in texture?

WHOLE WHEAT BANANA PANCAKE WITH COCONUT MILK

As I am having my baby girl literally pressing every single key on my laptop as I am typing & my son trying to open my screen all the way back; splitting my whole laptop in half so this will be a short post!

I am not & will never be one of those healthy people obsessed about quinoa & oats but finding healthier alternatives that still taste delicious for the food I love is something I am always in search for.

HOMEMADE GRANOLA

FullSizeRender(2)

Don’t make fun of me, Ok?

The first time I watched someone making granola on Food Network was many years back. I watched & thought what the hell is that? First, what’s oats (yes I didn’t know) & why is it mixed with all those things & baked? Then topped on yoghurt? And called granola?! God what on earth is that?

I decided to give it a try … Out of curiosity!

I searched & searched for this so called oats (as it wasn’t widely available by then like now) until I found it. I went home, followed the recipe instructions & BOOM I burnt it.

The whole house smelled smoke for about a day!

I decided … No more this granola thing & I don’t even want to know how it tastes like! The box of oats stayed in my pantry until it got expired & was thrown in the trash.

No cooking involved!

It is a “hands free” recipe with the fridge doing all the work.

SALTED CARAMEL & PECAN MINI PAVLOVA

I told you before; I am not a pastry professional baker by any means BUT I love making all other kinds of desserts. In the past 5 years I never bought dessert in any dinner I hosted; I always prepare it myself & it has to be a “first time to serve” dish. I know that’s totally risky as they say never serve untested food to your guests but let’s say I was lucky (thank god).
Mini desserts are my all time favorite; maybe because they look cuter or maybe because you don’t have large whole plates filling your fridge. With mini desserts, you can decide how many pieces you want & I love the idea of being in control of portions.

CHOCOLATE CHIPS BANANA BREAD (CAKE)

Banana Cake

SIMPLY the fluffiest … the most moist … the best … Banana Bread Ever!

I love cakes! I grew up in a house where we always had a box of fresh cake in the living room “of course store-bought as my mum hates cooking” but the idea continued with me even after marriage and when my kids grew a little it became even more essential.
