CHINESE FRIED RICE

Don’t you just love those recipes that simply use everything & anything in the fridge? You end up with a delicious meal & a clean fridge!

Chinese Fried rice is one of my favorite rice dishes on earth; it has amazing flavor with different textutes! I actually prefer making it without any kind of protein as I usually serve it with anything grilled (whether chinese or not) or with stir fries. It is this kind of rice that simply goes with anything; unlike bland white rice, this rice adds depth & flavor to any meal!

This dish is very flexible; use any kind of veggie you love/have at hand, add or omitt eggs, add any kind of protein on earth! This recipe is the base for many versions!

CHINESE FRIED RICE

Ingredients:

  • 3 tbsp oil
  • 1 green pepper diced
  • 1 medium onion diced
  • 1 large carrot shredded
  • 2 garlic cloves minced
  • 1/2 tbsp fresh ginger minced
  • 1 egg beaten (optional)
  • 5-6 cups cooked cold white rice
  • 1/2 cup sweet corn
  • 2 tbsp oyster sauce
  • 4 tbsp light soy sauce
  • 2 green onion sprigs (green part only), thinly sliced

Directions:

  •  Place a large wok/pan on high heat until hot. Add the oil & swirl to coat the pan. Add all the veggies (except the corn & green onion) & stir for a couple of minutes.
  • If using eggs: Push the veggies to one side of the pan. Add the remaining oil to the empty side of the pan & pour in the egg. Stir the egg quickly until it’s cooked. Mix the egg with the veggies.
  • Reduce heat to medium & stir in the cold rice. Let cook, stirring frequently for about 2-3 minutes or until the rice is starting to get warm. Stir in the sauces & corn; mixing everything together. Continue stirring for another 2-3 minutes until the rice is hot.
  • Turn off heat, sprinkle with the green onion & serve immediately.
