My beef and veggie stew got rave reviews so I decided to share with you more of those slow cooked dishes. Fork tender meat cubes in a rich brown sauce but contrary to the norm of adding fried potato cubes; I am adding sweet potato!
We might not be used to eating sweet potato in savory dishes but its sweetness compliments alot of dishes & adds an amazing flavor!
A very easy dish, cooked in about 2-3 hours but it doesn’t require a lot of work from your side. Warm flavors that are guaranteed to satisfy the whole family!
BEEF & SWEET POTATO STEW
Ingredients:

4 tbsp olive oil

750 gm beef cubes كباب حلة كندوز

1 large onion grated

2 garlic cloves minced

1 large green pepper diced
-
2 tbsp flour
-
2 cardamom pods حبهان
-
3 tbsp pomegrenate molasses دبس الرمان

5 1/2 – 6 cups hot water, divided

1 large sweet potato diced بطاطا
-
1/2 cup parsley chopped بقدونس

1/3 cup sour cream كريمة حامضة

salt & pepper
Directions:
- Place a large pot over high heat until hot, add 2 tbsp oil & sear the beef cubes until they take a nice color on all sides (they will still be raw). Cook the cubes in batches without crowding the pot to let the meat sear not boil. Remove & set aside.
- Add the remaining oil & saute the veggies for 5 minutes until they start to soften.
- Return the meat to the pot & sprinkle with the flour; mixing it well with the meat & veggies. Add the pomegrenate molasses, 5 cups water & cardamom. Stir everything together & bring to a boil. Once the mixture boils, cover the pot & let it simmer over LOW heat for 2 hours.
- Check on the pot every 30-45 minutes; giving the mixture a stir to make sure nothing sticks to the bottom.
- After 2 hours, add the sweet potato cubes & 1/2 – 1 cup water*; continue simmering COVERED on low heat until the sauce thickens, the meat is very fork tender & the sweet potato is cooked through.
- Turn off heat. Stir in the sour cream & parsley. Season with salt & pepper.
- Serve with white or turmeric basmati rice.
Notes:

The cut of meat used is كباب حلة كندوز; if you use any other cut of meat, the cooking time will change accordingly.

Cut the meat into small-medium size cubes so it cooks faster.

When adding the sweet potato, if the sauce is thick, add 1 cup water but if the sauce is still thin, add only 1/2 cup water.

If by the end of the 2 1/2 hours, the meat is still not fork tender, leave it to cook for another 30 minutes; adding 1/2 water if the sauce is thick.

Fork tender means that the meat easily falls apart when you press on it with a fork.
