CLASSICAL FRENCH TOAST

FullSizeRender

I know French toast seems like a regular recipe that anyone can prepare at home!

BUT NO. A BIG FAT NO!

Let me tell you my story with French toast.

I have been making French toast for ages; it’s just some milk & eggs beaten together with some flavorings! No need for a recipe, right?

Mine came out tasting nice but the texture always varied from a little dry to soggy although I made sure I never under or over soaked my toast so why the inconsistency in texture?

SWEET & SOUR CHICKEN

I don’t think I know anybody who doesn’t love Chinese Food! I remember growing up with Peking Restaurant being a phenomenal outing every weekend to indulge on all those Chinese dishes.

What I also discovered is that cooking Chinese food is as enjoyable as eating it. Easy & quick dishes that are packed with veggies YET very delicious. Perfect for our busy lifestyles.

CHICKEN WITH SWEET CHILI BBQ SAUCE

Before getting married & having kids, I used to hate anything cooked with bones; mainly whole chicken. It was such a hassle to eat; I always preferred fillet!

Then my cooking obsession started & I learnt that poultry cooked “bone in” yields the juiciest results.

And GOD! Whole chicken is so easy to cook; you just marinade it, throw it in the oven or over the stove & it takes care of itself! SPOT ON for busy & lazy days or actually any day!

CLASSICAL ONE POT ROZ M3AMMAR: SAVORY RICE PUDDING

aaaroz

Posting all those international recipes doesn’t mean that I am not a BIG BIG fan of our traditional Egyptian food.

You name it; stuffed vine leaves, stuffed eggplants, beef stew, molokheya … I just love all those dishes that not only taste amazing but also bring back so many childhood memories that I always long to.

I grew up eating a very unique kind of Roz M3ammar; actually you can never call it M3ammar because it was this oven baked very dry rice with a very crusty top & bottom.

I am not saying that I hated it; it’s just that when I grew up & tasted the real Roz M3ammar in a friend’s gathering; I realized that our version has nothing to do with the original recipe.

WHOLE WHEAT BANANA PANCAKE WITH COCONUT MILK

As I am having my baby girl literally pressing every single key on my laptop as I am typing & my son trying to open my screen all the way back; splitting my whole laptop in half so this will be a short post!

I am not & will never be one of those healthy people obsessed about quinoa & oats but finding healthier alternatives that still taste delicious for the food I love is something I am always in search for.

HOMEMADE GRANOLA

FullSizeRender(2)

Don’t make fun of me, Ok?

The first time I watched someone making granola on Food Network was many years back. I watched & thought what the hell is that? First, what’s oats (yes I didn’t know) & why is it mixed with all those things & baked? Then topped on yoghurt? And called granola?! God what on earth is that?

I decided to give it a try … Out of curiosity!

I searched & searched for this so called oats (as it wasn’t widely available by then like now) until I found it. I went home, followed the recipe instructions & BOOM I burnt it.

The whole house smelled smoke for about a day!

I decided … No more this granola thing & I don’t even want to know how it tastes like! The box of oats stayed in my pantry until it got expired & was thrown in the trash.

SALTED CARAMEL & PECAN MINI PAVLOVA

I told you before; I am not a pastry professional baker by any means BUT I love making all other kinds of desserts. In the past 5 years I never bought dessert in any dinner I hosted; I always prepare it myself & it has to be a “first time to serve” dish. I know that’s totally risky as they say never serve untested food to your guests but let’s say I was lucky (thank god).
Mini desserts are my all time favorite; maybe because they look cuter or maybe because you don’t have large whole plates filling your fridge. With mini desserts, you can decide how many pieces you want & I love the idea of being in control of portions.

APPLE WALNUT ARUGULA SALAD WITH BALSAMIC VINAIGRETTE

apple salad

I spent almost the first 25 years of my life hating salads! Ok don’t give me that look!! At my parents’ home, we only ate the regular Egyptian Baladi salad … ONLY … & when mum wanted to make things creative she added grated Rumi cheese to it; not even parmesan! So, I kinda got turned off by salads in general!
